also, california sauce is the best in the entire world. heiniken cans are mandatory. don't try anything else. if you screw this up i will lose my mind on you.

Love oysters...raw on the half w/ lemon and just a spot of Crystal hot sauce, damn my mouth is watering. Oh almost forgot.....and a good ice cold beverage.
oysters raw. The best I think. I've learned to make my own mignonette based on champagne vinegar and shallots. Key is to let it sit for a day to absorb flavor and then unleash the bite on the shucked delicacy. Some of the gnarliest horseradish I've found so far was a. In Anaheim and b. In Annapolis. No relation. But it's mandatory. Also homemade cocktail sauce. One time in New Orleans we got served raw oysters with bbq sauce based cocktail sauce. Wtf? I know it's the south, but God damn, dude! Maybe my pallet isn't sophisticated enough. Don't settle for mediocre farmed oysters. Wild is the way to go, great taste AND aftertaste. As a rule of thumb 6 times out of 10 west coast oysters are better (imho) but don't underestimate PEI oysters. Some people enjoy oysters with porter style beers (stouts and the likes), darker and Amber ales, or ipa. But on a hot day nothing beats a lager or even a pils and a freshly shucked dozen. Also if you ever thought it's weird that your server smells every oyster s/he shucks - you have that technique to thank for saving you from ridiculous runs. Cheers fellas... Oh man that looks really good, I'm starvin. Ever have fried whole belly soft shell clams? Kinda unheard of south of north central NJ and north to Maine. Absolutely the best fried shellfish ever.
It'll come with age little bro. One day, you too might appreciate a good dozen, as well as a good shucking. Nah mean? Zippy - gotta try that.
Funny thing around here... People are paying top dollar for "Cape May Salts." Cape May Salts? Who came up with that? We grew up eating them, and I still enjoy pulling up a bucket full every time I'm down there during the season. But we just called them, "oysters." My brother-in-law's driveway is paved with oyster shells. They also do wonders in the garden. But my personal favorites are Paramours, from the inland waterways between Wachapreague and the islands. Really, an ocean oyster. Good luck finding them.
Soft shell clams are also called piss clams or Ipswich clams. When I go to Maine I live on them, found some out of the way hole in the walls that made the best ever. Nothing better after a long hike then a basket of fried clams and a bottle of blueberry soda.
