How does a tail shape affect the ride? I assume a flat tail is more squirelly but I really have no idea.

Does a swallow tail turn better than a flat tail?

"Better" is strictly opinion and depends on your skill/waves. here's my take

squash (flat) tail: loosest. The wider the squash the looser the board
    .
swallow tails: much more stable on the drop, takes a bit more effort to turn

round tail: neutral. easy to turn but not as loose as a squash tail

(rounded) pin tail: takes most effort to turn, stable. solid in big hollow waves
