    Okay, here ya go fellas. Tonight we are having Moo Satay, it’s a Thai chicken dish.
    Mix: Coconut milk, Jamaican curry powder, and a small amount of sugar. Measurements depend on the amount you are making. Take 1 pork roast, you want some fat in the meat for flavor and slice into thin slices. (you are going to skewer it) Add the sliced pork and satay mixture into a bowl or bag and let marinate. I let mine marinate for two days, once marinated, skewer the pork.

    Before grilling, I put aluminum foil on part of the grill so the so the stick do not burn up. Grill on high heat until done. Some char is good

    Okay, now it’s time to make the peanut dipping sauce. This is a quick version that works very well. Peanut butter, fish sauce and chili sauce, I personally like it spicy, so you can add some Thai pepper to it. I didn’t have any so I used a couple drops of ghost pepper.

    I don't have exact measurements, so mix to your taste. Here is a pick of the finished sauce

    Thai food is great, if it's done right. There was a place I'd go back home that was so good. But now I live in the south, land of bad asian food. I tried a new Thai place that opened around here a while back (somebody else was buying). I ordered thai shrimp curry. It was awful, I couldn't even finish it. A week or 2 later, I picked up a can of coconut milk in the grocery store, read a recipe for thai shrimp curry, bought the ingredients, went home and cooked it up, it was great. Wtf?

    So, could some entrepreneurial Asians who can actually cook please come to the south?

    My girlfriend is part Thai and she was born in NC, parent still there. Her mom always cooks a $hit ton of food for me when we visit... oh yeah, i'll be there this weekend! WOOT WOOT!!! My favorite thing she makes for me is larb gai and green papaya salad (som tum) and moo dang, and shrimp pad thai and yam neua (beef salad) and, Jesus, I could go on forever!

    I can't remember the other stuff, I haven't been around her mom in a while. Last summer we went to FL for her cousin's wedding, I was learning quite a bit while being around her mom and her aunt.
