South has more waves and people. North has plenty of surf and less crowded. Tonas are available throughout. People are nice but very poor. Wind blows offshore constantly. That's all you need to know. Go and have fun.
If u are worried about safety I suggest you use one of the many surf operations down there. They will pick u up at airport then take care of you while you are there. I've used em for multiple surf trips. Surf guides make it real easy. Sure it won't be a "core" experience but for guys like me (wife, kids, job) the guide route gets rid of some of the bs and maximizes surf time. To each his own. There is a recent pic in the SI gallery of northern Nica. Obviously the waves can be really good!

The less time you spend in Managua, the better your odds. The policia will rape you financially on the roads if you're driving.
What are your questions? I lived there for a while and I go back every year for a few weeks. You have many options there- depends on what kind of experience you are looking for.
Been once and stayed in Popoyo and Playa Maderas. Got waves but Popoyo was a little crowded and too local feelin while Maderas was too beginner. Are the boat spots near SJDS (Santana, Colorados...) crowded like Popoyo? Also, anyone ventured up the pacific side? Heard some good stories about uncrowded waves with the same quality as SJDS in Aserradores (near Joe's place or Hotel Chancletas?)?
