We surf, we drink, some smoke, we eat! Any good food ideas for this weekend? I don't care how healthy, just toss up some ideas. Mexican Corn: I husk the corn and boil it in water with about 2 cups of sugar and some salt. Take it out and let cool. Brush with mayo and then roll in parmesan cheese. If you want a little spice, sprinkle some cayenne over it and serve with some lime wedges. There are different variations, toss it on the grill, etc. Sonoran Style Dogs: wrap your dog of choice in bacon and toss on the grill. Typically they use a bolillo roll, but you can use whatever roll you prefer. Shove it in the bun and top with pinto beans, pico de gallo, jalapenos or jalapeno sauce, some mayo and mustard. there are also different variations of this as well. Got 3 free nights at the beach this weekend and was thinking of what to cook. Got some chuck to grind for burgers and hot dogs for the younguns. I'm gonna be lazy this weekend. Got a buddy who shrumps and he's got 16 count shrump for 5.99 a lb. Probably go all Forrest gump with them. Picked up some vodka and coconut rum this morning so I'm ready. Had lots of cilantro a few weeks back so I grilled corn and made a compound butter with honey & cilantro and chipolte. Twas pretty tastey.
FYI what honey you use can really alter the taste. I did it once with a real flowery tasting honey and it was good but a little wierd. Usaually use a local honey thats kinda in the middle.
Going old school this weekend with a backyard cookout to celebrate my little girls Birthday. Grilling burgers and dogs. corn and a bunch of salads. A big batch of sausage and peppers. Homemade wine. Cold beer. I'll get a bushel of little necks. Some raw some on the grill. Checkered table clothes and yard games.
Yep I prefer the white (sweet corn) over the yellow. The sooner you eat picked corn the sweeter it is. My wife and I were in the Blue Ridge Mt.s one year right when the sweet corn was in season and it was like crack! We ate it every night at the campfire.
