i'm hoping to improve my side dish game. we've done things with squash recently for example. i heard red bell peppers are good off the grill. other than corn, asparagus, i could use some more suggestions
taters (in foil), onions, pineapple. Careful with the hot peppers, the heat releases the capsaicin and makes them hotter than you'd expect, could be good or bad. I've seen some smoked beer cheese that one of my friends who owns a brewery did and put on some brats. It was easy and looked delicious. Every time I go fishing and get some big mullet in the cast net I'm tempted to smoke them. I hear they're good but I haven't been able to eat my bait yet.... shrimp is a different story.

Nothing goes better with grilled food than some cold, vinegar based coleslaw. Potato salad is also awesome if you're more of a starch+mayo guy. Other staple sides are baked beans, grilled potatoes, or grilled vidalia onion. If you really want to get fancy you can do some grilled romaine lettuce. It sounds counter-intuitive but find a recipe and go for it! I'll be making some ceviche myself and possibly smoking a pork butt. May cook a tri-tip too. Who knows!
