Huevos Rancheros

    Okay, well, I might as well come clean... tonight I am going to cheat. Tonight i am going to slice some boneless chicken breasts, toss them in a pan with a little olive oil and salt and pepper until they are brown, set aside. Then, I take this sauce (cheater)

    I add some fish sauce, heavy cream or half and half (to make it go a little further) and some thai pepper. Then I have tossed in some frozen peas or snap peas. You can either add the chicken to the sauce or just put the chicken on the some rice nad pour the sauce over it. I am using white jasmine tonight. quick and delicious

    Fish sauce is one of my secret weapons. A lot people wouldn't try it if you told them but it adds a lot to sauces ect. I probably got 10 or more hot sauces at all times. I would love to get the sauce that is everywhere in CR.There is a hot version and a regular version that rocks. I came home with a lot but have used it all. Can't remember the name?

    Did 4 jalapenos on the grill stuffed with cream cheese and pimento cheese wraped in bacon. I didn't want to share.

    Fish Sauce is the shizzy. I do a shrimp (Carolina shrimp) and assparagus sauté with fresh ginger

    O, we got Harris Teeter grocery stores here that sell chicken titties for $1.99 a lb. Hard to beat that. I usually use a store bought curry paste 'cause it's faster/easier than makin' from scratch.

    easiest chicken titty meal I do is to heat a little oil in pan to almost smokin' and add strips of chicken and sear both sides for just a minute or so, pour in 1/2 cup or so of chicken stock or water or other sauce of choice, cover turn to low and in less than 10 minutes its done and super tender. Endless possibilities and quick.

    never heard of eel sauce.

    what is fish sauce?fish oil?never heard of it before,probably never ate it either.

    if you have eaten Chinese take out you probably have had it. Kind of like a salty teriyaki with fish oil (it does not taste fishy but very salty)

    Lizano? You can buy it from Peppers.com, which happens to be located in Rehoboth. I love that place.

    I love hot sauce as well. All of the El Yucatecos are great. The green is my favorite, but I keep the red around because it has a more roasted pepper flavor. I am working through a bottle of the black right now, which is good, but I won't be looking for more.

    Some of my current favorites are Busha Brownes Pukka Hot Pepper Sauce, CaJohns Fatalii Puree, Lottie's Scotch Bonnett Mustard Sauce, and Walkerswood Scotch Bonnet.

    I think tonight's dinner just got real spicy!

    Soul, I bought a bottle of the black and I gave it away.

    Fish sauce is used mostly in Thai foods.

    Zero, as a sweller and someone who cooks a lot, I am impressed with this threade.

    + 1 on the thread. love cooking as much as I love ocean.

    Skirt steak soaked in Chimichurri overnight and then grilled quick to a medium rare.....that is all.

    Sramphs. Had 'em last night. Nice, fresh Carolinas... marinated in lime, garlic, chili flakes, cilantro, olive oil... skewered and grilled, served with dirty rice and fresh stewed garden tomatoes (lots of green peppers and celery). Side of grilled squashes from the garden, too (sliced and marinaded same as the sramphs).

    I'm drooling a little LB. I could eat shrimp everyday.
    Been getting some jumbo shrimp straight off da boat lately. I cut some rosemary stems, skin the bark off and skewer the shrimp with them and grill with a little garlic,oil,lemon and salt. Easy, fast and good.
    Damn I'm hungry and it even lunch time yet!

    Nice fellas! My woman made me some spicy spinach and scrimp alfredo the other night over linguine. That sheet was delicious, so I gave her my ling-weinie. HA HA HA HA
