sometimes shoulders are better because you can tell exactly what the wave is going to do and where its gonna take you.

yup...but if you gotta dude taking off at the peak on the same wave and you forget to do a check before your pop-up, or if you don't bail for the right of way, you gotta deal with whatever the consequences are

Look left, look right, look left again, if clear go. Just like crossing the street. Don't get run over, wave come wave go

Thats assuming that the waves HAVE a peak and a shoulder. Here in jersey from my knowledge its all beach breaks, except from beltard, which is crowded, but general attitude nice. Peak and shoulder, seriously? Sit too long outside and you drift in the middle of left and rights, then paddle battle, or drift-on... Peak? Good luck.

Yep. If you surf mostly beach break and you'll only take off at the peak, you're not getting many waves. I take off at the peak when possible, but sometimes you just can't get there and have to settle for the shoulder.

Mostly all waves have peaks, including beach breaks. Maybe it a small peak, but it is there. Also, they may have multiple peaks, but a peak, they got!! An iron straight wave, peak less, would be a rarity, in my humble opinion.
We have mostly beach breaks here as well. NH is not Sunset beach, but we have peaks galore.
